    Among the many delicacies that can be found in the Eastern Pyrenees, there is one that you wouldn’t expect to come across: chocolate. Come discover the raw chocolate manufacturing process! You will be welcomed by an internationally renowned artisan chocolatier. After having travelled around the world, she decided to set up a business in the Eastern Pyrenees and is today pleased to share her passion about raw chocolate in all its authenticity.
     
    The characteristics of raw chocolate
    As you may know, we usually roast cacao seeds to transform them into chocolate. However, this step prevents the cacao from keeping all the minerals and vitamins that are very beneficial to the human body. That is why our partner chose to work with raw chocolate, meaning she never roasts the seeds and never works over 42°C, allowing her to preserve the seeds’ natural qualities.
     
    What will you do?
    We offer you a 2-hour experience to meet the artisan and discover the benefits of raw chocolate. During the first part of the activity, you will discover the raw cacao named Criollo from Ecuador, known as the best seeds in the world to produce raw chocolate. The best way to understand the chocolate’s benefits is to take part in its manufacturing process. Therefore, you will have the opportunity to pour the chocolate on marble in order to make organic and raw chocolate pucks. Then, you will decorate your own chocolate pucks and bring them back home as a delicious memory of your day out.
